Ingredients
- 400g udon noodles
- 300g chicken breast or thighs, marinated and grilled
- 4 cups chicken broth

- 1 tablespoon mirin

- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 cup spinach or bok choy
- 2 green onions, sliced
- Sesame seeds and green peas for garnish
Directions
Prepare the Chicken:
- Marinate the chicken in a mixture of soy sauce, mirin, and sake for at least 30 minutes.
- Grill the chicken until fully cooked, then slice into bite-sized pieces. Set aside.
Cook the Udon Noodles:
- Bring a large pot of water to a boil and cook the udon noodles according to the package instructions. Drain and set aside.
