Introduction

Ingredients

  • 400g udon noodles
  • 300g chicken breast or thighs, marinated and grilled
  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sake (optional)
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 cup spinach or bok choy
  • 2 green onions, sliced
  • Sesame seeds and green peas for garnish

Directions

  1. Prepare the Chicken:

    • Marinate the chicken in a mixture of soy sauce, mirin, and sake for at least 30 minutes.
    • Grill the chicken until fully cooked, then slice into bite-sized pieces. Set aside.
  2. Cook the Udon Noodles:
