Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cashews
  • 2 tablespoons vegetable oil
  • 1 bell pepper, diced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
  • Salt and pepper to taste
  • Cooked white rice, for serving
  • Sesame seeds, for garnish (optional)


Directions:

  1. Prepare the Chicken:

    • Season the chicken pieces with salt and pepper.
  2. Cook the Cashews:

    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
    • Add the cashews and cook, stirring frequently, until golden brown and fragrant, about 2-3 minutes.
    • Remove the cashews from the skillet and set aside.
  3. Cook the Chicken:

    • In the same skillet, add the remaining 1 tablespoon of vegetable oil.
    • Add the chicken pieces and cook until they are browned and cooked through, about 5-7 minutes.
    • Remove the chicken from the skillet and set aside.
  4. Cook the Vegetables:

    • Add the bell pepper, green onions, and garlic to the skillet.
    • Cook until the vegetables are tender, about 3-4 minutes.
  5. Make the Sauce:

    • In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, and honey.
    • Pour the sauce mixture into the skillet with the vegetables.

  6. Combine and Thicken:

    • Return the cooked chicken and cashews to the skillet.
    • Stir in the cornstarch slurry to thicken the sauce.
