Vegetarian Stuffed Peppers
Introduction

Ingredients
- 4 large bell peppers (red, yellow, green, or orange)
- 1 cup cooked rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup corn kernels (fresh or frozen)
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish (optional)
Directions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly to make sure they stand upright.
- Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are softened and fragrant, about 3-4 minutes.
- Mix the Ingredients: Add the corn, diced tomatoes, black beans, and cooked rice to the skillet. Stir in the cumin, paprika, salt, and pepper. Cook for another 5 minutes, allowing the flavors to blend.
- Stuff the Peppers: Spoon the filling mixture into each of the bell peppers, packing it in gently. Place the stuffed peppers in a baking dish.
- Add Cheese: Sprinkle the shredded cheese over the top of each stuffed pepper.
- Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and golden.
